Forget the traditional wedding cake and have a mason jar wedding cake! Stack cake filled mason jars between burlap and lace covered wood pieces & top with small ruffled cake for your one year anniversary. (Ok I lied, being the southern beauty that you are, you should keep some traditions.)

MASON JAR COCKTAIL RECIPES:
1.WATERMELON-MINT MOIJITOS
SERVES: 6
1.5 cups rum
1.5 cups freshly-squeezed watermelon (or other fruit) juice
½ - ¾  cup freshly-squeezed lime juice
½ cup simple syrup (equal parts sugar and boiling water, cooled)
30 spearmint leaves
Club soda
In a one-quart mason jar, combine the mint leaves and the simple syrup. Gently crush the mint leaves with a muddler or wooden spoon. Add the rum, then squeeze the limes directly into the jar, Now add the fruit juice.  You can either puree it and put it through a strainer, or use a food mill.  A little pulp is fine. Screw the lid on the mason jar, shake well, and pour a little into a glass over crushed ice. Add equal part club soda, taste it, and see if you like it. Add more of any ingredient until you’ve got it right.
Oh, and about that tequila variation:  Swap the rum for tequila, cut the lime juice, sugar, and mint in half, and forget about the club soda. Once again, adjust all quantities to taste.

(NOTE: This cocktail is perfect for a fall wedding. I made this for my engagement party and it was a hit. Very sweet, and literally tasted just like an apple pie right out of grandma's oven. (or right out of Publix bakery in my case.) Do know that not all states/areas carry 190 proof grain alcohol. I ended up getting the highest my town sold: 80 proof. It worked just fine. And hey, you put in a lot of time and effort getting beautiful for your big day, there is no need for people to have a blurry memory of your fantastic dress!)
3.THE BEER MARGARITA
MAKES: (6) 1 cup servings
1 (12oz) can frozen limeade concentrate
12 oz tequila
12 oz water
12 oz beer
limes
Mix all ingredients together. Add 1 slice of lime into each mason jar and fill with 1 cup of mixture.  Place over ice to chill.
